Homemade noodles add fun to any meal in any season. Noodles are inexpensive and easy to purchase, but making them is half the fun. Recipes are endless and are a part of every culture. This particular recipe is for egg noodles, but we took it a step further by doubling everything, and trying different ingredient adjustments.

Making noodles will excuse you from your daily workout because it was more effort than my sad little rolling pin could handle. It was tough without quality tools. I think the French style rolling pin without handles is the best, but I am sure that a baseball bat would have worked better than the one I used.

Tools: French rolling pin, mixing bowl, knife

Recipe:

  • 2 Cups All-Purpose Flour, plus extra for rolling & dusting or cornstarch
  • ½ tsp Sea Salt
  • 2 Eggs
  • 1 ½ Cups Water
    • Optional: add 1/4 C herbs, exchange 1 Cup of flour for (insert your favorite type of flour here, i.e., wheat flour, quinoa flour, oat flour)

Method

Place flour and sea salt in a mixing bowl then mix in eggs and water with a fork. Gather the flour mixture with your hands until a dough texture is achieved. Cover dough with plastic wrap or place in a plastic bag. Let the dough rest for 30 to 45 minutes.

Press the dough down with a large rolling pin. Then beat the dough with the rolling pin on a hard surface for 2 to 3 minutes. Dust the dough with some flour if it’s sticky. Place the dough in a plastic bag and let rest for 30 more minutes. Continue the process one more time.

Once the dough is ready, divide it into two or four pieces to make handling easier. Generously dust a large surface with flour and roll the dough as flat and thin as you can. Fold into a log and generously dust the sheet of dough. Then slice the noodles as thin as you can. Repeat the process with the remaining dough.

If the dough is sticky in the final stage, all of your hard work could be wasted as it will be a huge clump. You can always claim it was meant to be dumplings.

The noodles can be enjoyed immediately or left to dry slightly. If you want to enjoy the noodles at a later date, store in the fridge or freezer until you are ready to cook them.
